Seven Seas Seafood Soup: A Central American Favorite!

Whether you are in Panama, Costa Rica, Belize, Dominican Republic, Guatemala, Honduras, or Nicaragua, you will always find Seven Seas Seafood Soup in any local restaurant. Fishermen return with their catches early in the morning, and customers are always waiting to pick out their choices of fish.
Whether you are preparing a meal for a company dinner, or for your family, Seven Seas Seafood soup is a traditional Central American dish that everybody will love.
Here it is:
8 cups water
1 T. salt
1 Tsp. freshly-ground black pepper
1 lb. red/white potatoes, peeled, diced, and rinsed
1/2 cup diced carrots
4 chopped green onions (chop the greens, too!)
2 serrano chiles, minced
1/3 cup diced red bell pepper
2 tsp. minced garlic
1 lb. fish, cut in bite-sized pieces (use bass, halibut, sole, or tilapia)
1 lb. any combination of fresh shellfish (scallops, shrimp, calamari, clams, mussels, etc.)(leave the shells on if you wish)
2 cups diced tomatoes
3 T. chopped fresh cilantro
Bring the water to boil in a medium pot; add the salt, pepper, potatoes, and carrots. Bring to a boil, then lower the heat and simmer until the potatoes are tender. (just a few minutes) Add the onions, chiles, bell pepper, and garlic and cook two or three minutes more. Add the fish, shellfish, tomatoes, and cilantro and cook until the fish is done, about five minutes.
Serve hot. Homemade bread is good with this soup, but in Nicaragua, they serve hot tortillas with it. Please yourselves!
I am a firm believer in “When in Rome, do as the Romans do,” although I would edit this saying a bit, to “When in Central America, do as the Central Americans do.” This includes “Eat as the Central Americans eat!”
