Honduran Quesadillas: Holiday Food For ANY Day!

This Honduran specialty is often made and served to large groups of people on a holiday; it’s just that good! However, it’s just as good served anytime. You can make it in any kind of oven-save pan, but if you have a removeable-bottom tart pan, it will be even more attractive.

Ingredients:

* 1 1/2 cups margarine
* 3 cups white sugar
* 2 cups sifted all-purpose flour
* 1 cup rice flour
* 1 tablespoon baking powder
* 2 cups warm milk
* 6 eggs
* 2 cups Parmesan cheese
* 1/2 cup white sugar
* 1/4 cup all-purpose flour
* 1/4 cup sesame seeds

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a medium glass baking dish.

2. In a bowl, beat together margarine and 3 cups sugar until fluffy. Alternately beat in 2 cups all-purpose flour, rice flour, baking powder, and milk. Slowly beat in the eggs and Parmesan cheese. Transfer to the prepared baking dish.

3. In a small bowl, mix the 1/2 cup sugar, 1/4 cup all-purpose flour, and sesame seeds. Sprinkle evenly over the batter in the cake pan.

4. Bake 45 minutes in the preheated oven, until a toothpick inserted in the center comes out clean. Cool completely, and cut into squares.

This is a nice dish to serve as a side to a spicy dish; it’s not really ‘bland,’ but it’s cheesy and soothing.
